Heat butter in 4-quart pot. Add onions and sauté 6 to 8 minutes. Add chiles and merlot wine; cook about 2 minutes or until wine is reduced. Add chicken broth and season with salt and pepper. Add half and half, cheeses and chives, stirring until cheese melts.

If desired, serve in espresso cups with dollop of whipped cream, fried pancetta and crostini.
