Butter one side of each bread slice. Spread other side with thin layer of barbeque sauce or mustard. Place one slice bread sauce-side-up on work surface and layer with pulled pork, poblanos and pepper jack cheese; top with relish. Place remaining slice of bread on top, sauce-side-down. Press sandwich in panini press (or grill) until pork is heated through and cheese is melted.
