Heat oven to 450°F. Grate mozzarella, gouda and parmesan cheeses, then mix in bowl.

Stack basil leaves, roll and slice into 1/4 inch wide strips. Set toppings aside.

Roll out fresh pizza dough into 6x12-inch rectangle, approximately 1/8 inch thick. Place dough on a foil-covered baking sheet. Brush dough with olive oil, then sprinkle shredded cheese on top. Add crushed red pepper flakes, if desired.

Bake flatbread for approximately 10-15 minutes, until cheese is bubbly and crust is starting to brown. Remove from oven and top with fresh basil.

Slice into eight pieces and serve.
