Crumble bacon; set aside. Toss cheese with dill, if using, and set aside. Place tomato slices in bowl large enough to accommodate in one layer and pour enough buttermilk over to cover. Let sit 5-10 minutes, turning once. Meanwhile toast bread slices. In shallow bowl, mix cornmeal, flour, sugar, Cajun seasoning and black pepper. Heat broiler with rack 3-4 inches under heat source.

Pour oil to depth of about 1/2 inch in heavy skillet and heat to 325-350°F. Remove tomato slices from buttermilk, allowing excess to drip off. Dredge in the cornmeal mixture. Place in hot oil and fry 2-3 minutes on each side, until crisp and browned. Place a tomato slice on each bread slice. Divide bacon crumbles over. Divide shredded cheese over each. Place on broiler-proof pan and broil until cheese melts. To serve, garnish with pickled chile slices or sport peppers. Or, drizzle hot sauce over to taste.
