Beef Tenderloin Tips Mexicana on Cheesy Rice

Cooking Instructions

Cook rice according to cooking directions with water amount specified and salt. After rice is cooked and steamed but still hot, toss lightly. Sprinkle cheese over and cover pan to keep warm.

While rice is cooking, brush bottom of medium-sized skillet with olive oil. Heat until tips sizzle when dropped in. Quickly brown the tips in batches, if necessary (do not crowd) and remove quickly to a plate while still rare to medium rare.

Add 1 1/2 tablespoons olive oil to skillet meat was browned in. Stir in onion and chile poblano; cook over medium low 15-20 minutes. Add garlic last 3 minutes of cooking. Then add tomato sauce and cook at least 10 minutes, keeping at simmer. Add tenderloin tips and increase temperature enough to warm tips through.

To serve, place spoonful of rice, keeping cheese on top, on each serving plate. Place a portion of the meat-sauce mixture over. Sprinkle with cheese, avocado and tortilla strips.


*You may use another Mexican red tomato-base sauce, although the roasted tomatoes add a welcome dimension to the sauce.
