Sharp Cheddar and Parmesan Scalloped Potatoes

Heat oven to 400°F. Clean and peel potatoes. Slice 1/4 inch thick.

Mix both cheeses together. Heat milk to a lower simmer in a small saucepan.

Butter 1 or 2-quart casserole dish. A bread loaf pan would be fine too. Layer 1/3 of potatoes on bottom. Sprinkle with 1/2 the onions, 1/3 each of salt, pepper, hot sauce and butter. Add 1/2 the flour and 1/4 of the cheese. Cover with another 1/3 of potatoes and repeat last layering step. Cover with final 1/3 potatoes and another layer of cheese and remaining salt, pepper, hot sauce and butter to the top. Pour in warmed milk (milk may not cover all the potatoes). Cover dish tightly with foil and bake for 45 minutes.

Remove from oven and sprinkle on remaining 1/4 of cheese and horseradish. Bake for another 30 minutes until golden brown. Cool for 20 minutes before serving.
