Creamy Five Cheese Mac with Bacon

Heaven in a bowl! Keep this go-to recipe on hand for hosting game night or anytime you need a decadent entrée that will win over your guests. Five cheeses are melted to dreamy perfection in this creamy pasta bake.

Heat oven to 350°F.

Cook bacon in a large skillet until crisp. Remove bacon to a paper towel to drain. When cool enough to handle, crumble bacon. Meanwhile, cook pasta according to package directions until al dente; drain. Set bacon and pasta aside.

Cook onion in butter in a Dutch oven over medium-low heat until tender, stirring occasionally. Whisk in flour until smooth. Add garlic; cook and stir for 1 minute. Gradually whisk in broth, cream and Montreal chicken seasoning. Bring to a boil; cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in cream cheese, colby jack, sharp cheddar, provolone and mozzarella until melted. Stir in reserved bacon and pasta. Season with salt and pepper to taste. Remove from the heat.

Spoon pasta mixture into a greased 13 x 9-inch baking dish. Bake for 20-30 minutes until the sauce is bubbly.


Recipe Tip:
Any brand of Wisconsin cream cheese, colby jack, sharp cheddar, provolone or mozzarella cheese can be used.

Colby cheese is different from cheddar because the curds are rinsed. Removing some of the whey produces a more elastic texture. Colby cheese has the best flavor when it’s young, just a few months of age.
