Parmesan and Fresh Mozzarella Shrimp Crostini

Cooking Instructions

Heat oven to 350°F. Slice Italian bread into as many slices as desired. Using a pastry brush, brush a thin layer of olive oil over each slice. Top with a sprinkle of parmesan, about 1/2 teaspoon per crostini. Bake until bread is lightly golden, about 4-7 minutes.

Remove from the oven and set aside.

Meanwhile, toss shrimp well with pesto (about 1 teaspoon for every 2 shrimp) and season with salt and pepper. Grill on an indoor grill pan, outdoor grill or simply sauté in a skillet until cooked through. Remove from heat and set aside, keeping hot. Top each crostini with about 1 tablespoon of pesto. Top with a tomato slice and piece of mozzarella. Place in oven until cheese softens, about 5-7 minutes. Place two shrimp atop each crostini. Serve hot.
