Bring apple juice to boil in medium saucepan. Add candies and gelatin; stir until dissolved. Add applesauce; mix well. Pour half of gelatin into 9-inch pan or 2-quart clear glass bowl. Chill until firm. Allow remaining half of gelatin to stand at room temperature.

Combine cream cheese, sour cream, lemon juice, pecans and celery; mix well. Spread evenly over gelatin in pan. Pour remaining gelatin mixture over cream cheese layer; chill until firm. Cut into squares. Serve on lettuce-lined salad plates, garnished with additional red cinnamon candies and celery leaves.
