Wisconsin Monterey Jack Black Bean Tortilla Casserole
1 pound ground beef, browned and drained
1 1/2 cups prepared salsa
1 can (15 ounces) black beans, drained
4 medium flour tortillas
2 cups (8 ounces) Wisconsin Monterey Jack cheese, shredded
Preheat oven to 400° F. Combine ground beef, salsa and black beans. In a greased 2-quart round casserole dish, layer 1 tortilla, 2/3 cup beef mixture and 1/2 cup cheese; repeat layers three times. Bake for 30 minutes or until heated through.
Variation: For authentic Mexican flavor, substitute shredded Wisconsin Queso Blanco Asadero or Queso Quesadilla cheese for Monterey Jack cheese.
