Beef Stroganoff

Servings: 6


2 pounds lean sirloin steak
3 tablespoons butter
2 onions, sliced thin
1 pound mushrooms, sliced
1 tablespoon flour
1/2 teaspoon paprika
1/4 teaspoon pepper
Dash cayenne pepper
1 cup plain yogurt

Cooking Directions:

Cut beef across grain into narrow strips. Heat 2 tablespoons of butter in large heavy frying pan; add meat and onions. Cook over high heat a few minutes, turning meat to brown on all sides. Lower heat; add mushrooms and cook, covered, for 10 minutes. Remove meat, onions and mushrooms from pan; set aside. To pan juices, add remaining tablespoon butter and stir in flour and seasonings. Pour in yogurt slowly, stirring constantly. Add meat mixture and heat only until hot. Serve with noodles or rice.
