3/4 cup red onion, julienned
1/2 teaspoon garlic, chopped
2 teaspoon olive oil, divided
1 (12-inch) pre-baked pizza crust
1/2 cup pizza sauce
1 cup (4 ounces) Wisconsin mozzarella cheese, shredded
4 ounces Wisconsin brie cheese, sliced 1/4-inch thick
1/2 teaspoon ground cumin
3 ounces ham (or more to taste), in 1/4-inch dice
12 to 15 fresh spinach leaves, stems removed
Preheat oven to 475°F.
Toss red onion and garlic with 1 teaspoon olive oil in oven-proof dish; roast until soft, about 5 minutes. Cool.
Place pizza crust on pizza pan or large baking sheet. Spread sauce pizza crust. Sprinkle Mozzarella over sauce. Arrange ham over top of mozzarella.
Sprinkle red onion mixture over ham. Arrange brie on top, and sprinkle with cumin. Toss spinach with remaining 1 teaspoon olive oil to coat lightly; arrange on top of pizza. Bake for 8 to 10 minutes or until the crust is lightly browned.
