Ingredients:
1 medium onion, chopped
2 ribs celery, chopped
2 eggs
2 pounds lean ground beef
1/2 cup dry Italian bread crumbs
4 slices (1 ounce each) baked ham
1 cup (4 ounces) Wisconsin Fontina cheese, shredded
1 cup (4 ounces) Wisconsin Aged Provolone cheese, shredded
2 tablespoons Italian seasoning
Wisconsin Parmesan cheese, grated
Cooking Directions:
Preheat oven to 350°F.
In blender container or food processor bowl combine onion, celery, and eggs. Process until smooth.
In large mixing bowl, combine ground beef, bread crumbs and onion mixture. Mix lightly, but thoroughly. Cut a 12" x 24" piece of plastic wrap. Place hamburger mixture on wrap and pat into 9" x 12" rectangle. Lay the slices of ham on top. Spread the shredded cheese over the ham. Sprinkle with Italian seasoning. Lift the plastic wrap starting at the short end and roll the mixture into a tight roll. Press edges and ends of roll to seal. Place meat roll in a 9" x 13" baking dish seam side down. Bake one hour and 15 minutes or until the loaf reaches an internal temperature of 160°. Let stand 5-10 minutes before slicing and serving.
Serve with your favorite spicy tomato sauce and top with grated Wisconsin Parmesan cheese.
