2 cups peeled, sliced fresh peaches1/4 cup peach schnapps liqueur1 cup (8 ounces) Wisconsin mascarpone cheese1/4 cup sugar1/2 teaspoon vanilla3 tablespoons peach schnapps liqueur1 pint fresh raspberriesToasted slivered almonds
Put peaches in a small bowl. Add 1/4 cup liqueur and let stand for several hours. In a small bowl, combine the mascarpone, sugar and vanilla using an electric mixer. Add 3 tablespoons of liqueur. Beat. Chill. To serve, divide the peaches among 6 stemmed glasses. Top each with 3 tablespoons mascarpone mixture. Sprinkle with fresh raspberries and almonds. Serve immediately.
