2 cups cooked cauliflowerets1 cup cream-style small curd cottage cheese1 cup (3 ounces) grated Wisconsin parmesan cheese2 cloves garlic, finely chopped2 tablespoons grated onion1 1/2 tablespoons chopped fresh oregano or 1 1/2 teaspoons dried oreganoFreshly ground black pepperWhole wheat crackers or bread sticks
Combine cauliflower and cottage cheese in a bowl using an electric mixer. Stir in parmesan, garlic, onion, oregano and pepper. Pour into buttered 1 quart baking dish. Bake at 400°F for 20 minutes or until heated through. Serve with whole wheat crackers or bread sticks.
