Cottage Cauliflower Spread

Servings: 24


2 cups cooked cauliflowerets
1 cup cream-style small curd cottage cheese
1 cup (3 ounces) grated Wisconsin parmesan cheese
2 cloves garlic, finely chopped
2 tablespoons grated onion
1 1/2 tablespoons chopped fresh oregano or 1 1/2 teaspoons dried oregano
Freshly ground black pepper
Whole wheat crackers or bread sticks

Cooking Directions:

Combine cauliflower and cottage cheese in a bowl using an electric mixer. Stir in parmesan, garlic, onion, oregano and pepper. Pour into buttered 1 quart baking dish. Bake at 400°F for 20 minutes or until heated through. Serve with whole wheat crackers or bread sticks.
